Nashville Tomorrow!

Tomorrow I am leaving for Nashville for the weekend to attend an education career fair! My aunt teaches down there and she got hired at this same career fair last year, so I'm really hoping that this could be my big break! I really really really need this, a good job, a new city...it would be GREAT! Everyone please say a pray for me and wish me luck, I need all that I can get!!!

So yesterday was filled with prep work for tomorrow. I printed of a zillion copies of my resume, cleaned out my car, checked my oil, pumped up my tires, and filled up my gas. Everything is a GO!

I am also excited because Lucas goes to school in between where I live and Nashville, so I will be stopping by to see him on my way there tomorrow. He has been really sick since last weekend, so I am glad that I will get to see him for a little bit. Why is it that guys convert into a 2 year old state when they are sick?! haha. I swear they would not know what to do without their moms/girlfriends/wives/sisters/etc. Women just know how to take care of sickly people! haha. I'm going to put together a "get-well kit" for him.

After yoga on Tuesday, my legs and muscles were feeling really good and stretched, so I was ready for a run! Ok, I'll be honest my legs and arms were freakin SORE from yoga!! Everytime I do yoga I get more sore than any other exercise that I do. I guess its all that bending and stretching. So I warmed up a little on the eliptical and then moved to the treadmill. Here was my workout:

  • 35 Minutes on the eliptical
  • 4 mile run on the treadmill at an east pace.

I got in a pretty good workout, so I was happy with that.

Yesterday for lunch I made what is becoming my favorite wrap combo:

  • Italian Herb Flat-Out Wrap
  • Swiss Laughing Cow Cheese Wedge
  • Sliced Cucumber
  • Sliced Tomato
  • Spinach
  • Dijon Mustard

After my day of preparation I hoped in the shower and got ready for POOL NIGHT! Yep, the Wednesday night tradition. I am really starting to sharpen up my pool skillzz.

Fast forward to this morning where I once again sacrificed my chances of living to be 130 by eating cottage cheese everyday in order to mix up my meals. But, it was worth it!

  • 1/2 Banana
  • 1 tbsp. maple syrup
  • Strawberries, chopped
  • A Few Cinnamon Mini Rice Cakes crumbled on top.

Alright, I still have a lot to get done today before I leave tomorrow. I am soo excited about my trip. Is it weird that I actually like driving long distances by myself?! Its a five hour drive...so I am off to update my Ipod, vacuum my car, go for a run, then workin it at the mall.

Won't You Be My Neighbor?

First and Foremost, I must give my humble apologies for not blogging yesterday, I meant to after I got home from work, but it got insanely busy at work and I had to stay late and then the bestie came over right after work so we could have our usual Wednesday night pool and karaoke. haha. I only participate in one of these activities, I'll leave it a mystery as to which one ;)

Speaking of pickles dont you find it odd when someone like pickles but hates cucumbers or vice versa?! Does anyone feel that way?!

I tried a new type of hummus in my wrap that I found at the store. It was just called "greek style" so im not sure what the flavor really is, it tasted kinda garlic-y. But I LOVED it, I think I may have even liked it better then my usual Red Pepper Hummus.

I did manage to squeeze in a gym trip that included:

  • 35 minutes on the eliptical
  • 15 minutes on...geez, that other thing. haha.
  • Approx. 400 calories burned.

This morning for breakfast I had the usual oats:

There is a seafood restaurant in Charleston that serves a dish called "the bucket of scrapes" and its just a big pail type thing with samples of all kinds of different seafood. This is what I think of when I make oatmeal, because I just throw in anything that I think would be good in oatmeal. So here is my "bowl of scrapes"

  • 1/2 cup oats
  • 1/2 cup water
  • 1/2 cup skim milk
  • 1/2 Naner
  • Handfull of Blueberries
  • Dried Apricots (NEW ADDITION!)
  • Cinnamon
  • 1 tbsp. Maple Syrup

Pretty random mix, but yummy all the same :)

OTHER EXCITING NEWS ALERT: I think I may have found some Arnold's Sandwich Thins. I have done the search online for close stores that sell them, but it always says there are none. Well, yesterday I gave it one last shot and it found TWO STORES in my area that sell them. Now, I havent gotten them yet, so I'm not gonna get my hopes up too high, but I am gonna go on the hunt today and I will let you know the results!

It such a gorgeous day outside and I fully intend to enjoy it girls!Plans for today:

  • Laundry

Subbing It Up

So, I took everyone's words of encouragement today and "sucked it up" and did it. Thats right, I braved the battle field known by many as MIDDLE SCHOOL! I was soooo nervous, not to mention exhausted (I had to be there at 700!). But it turned out to be ok. Everything was all laid out for me, and most of the children were actually pretty helpful. There were a couple of times I saw whispering and secretly feared they were planning some evil plot against me. But I made it home safe and sound. Glad thats over with, and now im $60 richer! woo hoo!

I had such high hopes for last nights dinner, but I was let down. I stocked up on a TON of veggie burgers because they were on sale, so I decided to make one for dinner on the george foreman grill. First off, there are no instructions for grilling these things, only baking them in the oven. So I had NO idea how long to leave it on the grill. I just sort of sight-checked it every few minutes and when it looked done I took it off. Unfortunately, I think I cooked it a little too long because it was really tough! Also, I warmed the bun in the microwave, but I think I did that for too long too because the bun shrunk to about half its original size and got really tough as well. It was bearable, but not as delicious as I had initially hoped.

I dressed it up with all the fixin's. Tomato slices, onion, spinach, mustard, and ketchup. Also, of course, you cant have a burger without a pickle on the side. And some "apple fries" :)

For breakfast this morning I fixed some oats with the usual mix-ins.

  • 1/2 cup oats
  • 1/2 cup water
  • splash of vanilla soy milk
  • 1/2 banana
  • handful of blueberries
  • LOADS of cinnamon

I ate this up quickly and headed on to school. I knew that I wouldnt get to eat lunch until I got home around 3, so I brought me some Honey Twist Pretzels to snack on throughout the day. When I got home I fixed up a lunch worthy of a middle schooler. PB and J with an apple on the side. Am I a teacher or what?!

Grilled Peanut Butter and Jelly with:

  • 2 Slices Whole Wheat Bread
  • 2 tbsp. Might Maple Peanut Butter
  • Other Half of the Banana from Breakfast
  • Blackberry Preserves
  • A few Raisins
  • Small Apple
  • Remainder of Honey Twist Pretzels

Now, Im off to tan quickly before heading to my second job at the mizzalll (thats the mall he he). There is this teeth whitening place that just opened up in the mall and they put one tanning bed in it in the very back and do not charge mall employees to lay! I know its horrible for you, but Im pasty and its free, and soon enough I will be out in the real sun, so its not for long.

Just Havin' a Good Time

Happy Saturday everybody! I hope everyone is having a blast this weekend. My weekend has been filled with work, work, and more work. But thats OK with me, because that means im racking in the cash flowage. haha. I just got home from a 9 HOUR shift!! NO BREAK! Im a workin woman, thats for sure!Today was the most beautiful sunny day too! ohhh spring is sooo close! :)

I had to pack up my lunch since I knew that I was going to be at work for so long. isnt it just the cutest?

My breakfast this morning was such a disappointment :( I think that I put too much water and/or milk in my oats and they were all runny! PLUS Im pretty sure that my roommate ate about 95% of the HUGE-O carton of blueberries that I bought, so I didnt have many left. I did what I could though.

  • 1/2 cup of oats
  • 1/2 cup water
  • 1/4 cup vanilla soy milk
  • few blueberries
  • 1 banana
  • few blackberries

Now Im off to have dinner with some girlies from work. I am SO TIRED though, so I might have to call it a short night. Anyways gals, I leave with the hilarious video for your saturday night viewing pleasure...hopefully this is you tonight, "just havin' a good time".

Confidence

haha. I love that quote. Its funny, but i think that you can get a real positive message out of it. I think sometimes I get so concerned with how others see me that i need to just stop and think...wait! I think im just fine, and anyone that thinks otherwise is just "misinformed"

There is nothing more gorgeous than a confidence.

Anyway, yesterday was SUCH a boring day! I had asked off work to go on a trip with my manager, but she canceled! I wish I would have just worked, I get so restless and bored when I have nothing to do. I did get in a little grocery shopping though, and picked up a bunch of fruits and veggies!! Just look at our fruit bowl!

I cant wait to pick up some blueberries and strawberries soon too! Yesterday for lunch I tried to make a wrap and grill it on the ol' Georgie, but I dont think I have mastered the art of "rolling" these things up because they always turn out to be a mess. I also had an apple on the side.

And if you would draw your attention to the AWESOME plate that it is all sitting on...I got a couple new dishes at target yesterday as well. I have been wanting just some simple plates with colorful designs and these were only 2$!! I picked up two and a bowl as well:

The bowl (and the banana that was previously pictured) made an appearance at breakfast this morning. I finally decided it was time for something new and made oatmeal again for the first time since graduation!

This mix contained oats (DUH!), 1 banana, strawberries, cinnamon, and some of my bear naked granola that I recieved in the mail...YUM!!

And of course my ritualistic cup of BLACK coffee. haha. the boyfriend makes fun of me for drinking black coffee, he says I take it "like a teacher".I guess its true, teachers ALWAYS need their coffee and they need it strong! I put my coffee in the same mug almost every morning, because it is the perfect size and I just love it!

***UPDATE****

For lunch today I was feeling something a little bit different than a turkey sandwich, and I wanted something gooey and messy for some reason! SO! tuna salad sandwich it was! I HATE mayo so I always use mustard instead. I mixed mustard, tuna, diced tomatoes, relish, and garlic hummus together, piled up some spinach leaves on some whole wheat bread and toasted the whole thing. On the side with an apple...on my new plate!!! I have to say, I usually like my sandwiches better toasted, but warm tuna is kinda gross...next time I will not toast!
