Snowy Day = Warm Eats!

Today is definitely one of those days were you just want to stay in, sip some hot tea, and watch cheesy romantic comedies....I may just do that ;)

What is your favorite romantic comedy???

It also happens to be one of those days to eat warm foods! So of course this morning I had to make me up some FRENCH TOASTS! So I mixed together my 2 egg whites, 1/4 cup vanilla soy milk, and cinnamon...

Placed my whole wheat bread in the mixture...

Flipped it over...

Placed it in my pan, that is sprayed with non-stick cooking spray...

Fixed a nice cup-o-joe while it browned on both sides, and then placed it on my nice big plate...

Thats a little better...top it with some maple syrup and blackberry preserves....

After breakfast I lounged around a little and decided to get up off my butt and hit the gym. It was another one of those day were I really had to motivate myself the whole way there but once I got there I got in a pretty good workout, which is usually how it happens, once I get jump started I can just keep going and going and going....ok, maybe not THAT much, but you gets what I'm sayin. My workout was:

  • 35 minutes on the eliptical
  • 30 minutes doing intervals on the bike.

So over an hour...not too shabbyyy for starting out being less than enthused about it. I usually try to spend at least an hour at the gym when I go. I mix my cardio days and weight training days, so on cardio days I'll do an hour of cardio, and on weight days I'll do 30 min. of cardio and 30 min. of weights.

By the time I got home it was starting to full on snow! The college even canceled classes for tonight...which RARELY happens. I think we are supposed to get around 7 inches! I was hungry and in the mood for something warm when I got home so I made a toasty sammie.

This one had deli sliced turkey, spicy mustard, deli american cheese, LOADS of spinach, and salsa. With a side of sun dried tomato wheat thins.

Ohhhh Snnnaaapppp!

Oh my goodness girls, this weather is really driving me crazy. I am just one of those people that can NOT sit at home all day. I just get cabin fever or something. Well, the snow kept me stranded ALL day inside. My dad did come over for a visit...and I of course put him to work around the house ;). I did manage to get a little at home yoga goin on though. I did one of the "intermediate to advanced" videos on yogatoday.com. I figured I have been doing this for a while, I can probably handle it. Well, lets just say I have not worked my way up to "hand-stand" ability just yet. And its all good and fine when your trying OUTDOORS, but inside, where there are tables, lamps, and other breakables around...its just not the best idea. Lesson learned.

After that I made up a fantabulous lunch! They had hummus on sale at the grocery store, so I bought about three different kinds. My favorite is the red pepper hummus...so i made a cucumber, spinach, and red pepper hummus sammie on honey wheat bread. MMMM It was delicous!

After lunch I had to take a shower and get ready to brave the winter storm and go to work. I got allll bundled up, because if you couldnt already tell...I despise the cold. Here is me all bundled up and NOT excited about going out.haha

It was so funny at work because in East Tennessee, when it snows people FREAK OUT, because usually it doesnt get too bad. The mall was like a ghost town, and a lot of the little privately owned shops closed down early. Everyone had to get home before the roads got too bad! However, I had to stay until 930. By the time I got to my car it was covered in snow and the parking lot was also covered. I managed to only slide out a few times, and never went over 20MPH on the way home. Now I am safe and sound in my nice warm home eating dinner of a chicken stir-fry and a nice salad.

I think this snowy night definitely calls for a nice warm bubble bath before bed, so Im off the take care of that! I hope everyone is staying warm and snuggl-y tonight. :)

What The?!!?!

Ok, so I wake up this morning with all the intentions of a pretty full day...you know, taking some things back, gym, grocery shopping, work. Little did I know I would open the curtains this morning to find THIS going on outside:

I didnt even know it was supposed to snow!! There goes my day, I guess. Yoga on the laptop sounds good to me! haha. Maybe the mall will close and I wont have to work either. Im tellin ya people around here FREAK when it snows even a little, because its not that often that it does. oh and yes, that is my poor little car covered in snow...do I even own a ice scraper?!

For those of you who hadnt heard about the peanut butter thing here is a link to the report. Its kinda scary, but I still finished off my jar of cinnamon raisin swirl last night ;). I figure if Im still fine after eating most of the jar over the past few weeks, the PB should be uncontaminated.

Does anyone else watch the food network as much as I do?! I just love it for some reason, and its kinda embarrassing to admit! Who is your favorite cook?...or what is your favorite show? I think my favorite cook would have to be sandra lee, all her recipes are really simple...PLUS she always has "cocktail time", and who doesnt love a good cocktail?! and yes, I cant help it...I think bobby flay is a cutie!

I just got off the phone with my mom and we have made plans to watch the inauguration tomorrow morning together. How appropriate is it that the very first african american president is being sworn in the day after Martin Luther King Jr. day?! Its so amazing how far we have come in this country and it really makes me proud that we are no longer living in the dark ages when it comes to race and people who are different. I strongly believe that everyone should have love for all people, even people who are different. America is such a melting pot and I love that. I love discovering new people, new food, new clothes, etc. So I hope everyone will EMBRACE CHANGE.

Well, Im off to make some breakie and finish up some stuffs around the house. For those of you who have the day off, I hope you enjoy it dears! And for those of you who dont...make the most of it and STILL enjoy it!
