Friday Night and I Feel Alright

Happy Friday girlies! I know everyone has been looking forward to the weekend and its finally here! Tonight is kind of a chill night for me, I think my friend Tina and I are going out tomorrow night.

Today was a pretty relaxing day as well. I got in a little gym time. I only did 35 minutes on the eliptical today because I just wasnt really feeling it for some reason...I was nervous because I have been waiting to hear back from my interview...but a little exercise is better than none at all, right?! After the gym I went into the grocery store to pick up a "few" things, and ended up with a little more than I had anticipated! They had so many veggies on sale!

These broccoli sprouts were on sale too, the PERFECT thing for my sammies, for sure :).

And of course I had to get stocked up on my fruit: apple (cameo and crispini, bananas, oranges, and grapefruit).

Back when I was student teaching and eating lunch in the teacher's lounge, I always saw this one teacher bringing these salads for lunch and thought they looked kinda good and convenient.

Tuscan Pesto Chicken Fresh Express Salad

I decided to pick on up (since it was on sale too) for something quick for lunch...since I was STARVING. Upon further investigation of the salad when I got home, i realized that it kinda sucked. All it had was romaine lettuce, that was IT for the veggies, and then some grilled chicken, some gross looking cheese, croutons, and dressing. I definitely had to "health" it up a litte. I quickly tossed the croutons and the cheese and just used the lettuce, chicken, and dressing...then I added in some spinach leaves, tomatoes, and cucumber...it ended up looking something like this:

The dressing and the chicken were actually pretty good...and once I added the extra veggies the salad was pretty decent.

I worked a little after that and then came home and the roomie and I cooked up some stir-fry using this HUMONGOUS bag of stir-fry veggies she bought. That girl and buying in bulk, im telling ya. ;)

We cooked up some noodles to go with it and mixed it with soy sauce and the stir-fry mix. Here is my plate:

Oh yeah, something VERY exciting happened today. I walked out of my door to go to work and there was THIS laying on my door step.

What is you ask?!.....A package from Mike!! In case you didnt know Mike is my boyfriend, and he currently lives on the complete opposite side of U.S.! It was a very good surprise for the day :)Bold

Inside was a book that I told him I had been wanting to add to my collection of books for my future classroom. It is one that all of my professors recommended. He knew that I had wanted it because I showed it to him one day, but decided to wait until later to buy it. AND he got it for me!

Well, that is about all of the excitement for the night, I think. Ill probably call it a night soon.

But first I have a question for you gals...those of you who eat Tofu regularly, I really wanna start making it too...like in sandwiches and such. How do you cook it and season it?! Please give me ideas!!!

Through a Child's Eyes

So, I was talking to my boss today at work about her children and it really got me thinking. I have seen so many amazing things in my experiences working with children. There were so many times when just their pure imagination just left me in awe. Whenever I would pose a question to the students "i dont konw" was never an option for them. If they didnt know the answer, they would make one up...and in detail, until you really believed that might be the right answer! I just wish I still had the ability to see the world like children do and have such an amazing imagination and need to learn about everything.

I have this theory: No matter how bad of a day you are having, no matter what is going on in your life, just spending time in the children section of any book store, library, etc. can instantly make you smile. I dont know if this is weird or not, but any time I am just having one of "those days" I go to the book store and look at children's books. TRY IT SOMETIME! I DARE you not to smile while reading most of those books. Last year I discovered one of my favorite children's books when I found it at a bookstore and read it to my class for Valentines Day and I just HAD to share it with you. Ok well, it might be wayyyy to long to put it all up here, but Ill put some of my favorite parts. Its called "I like you and I know why..."

How cute is that?! Its just one of the many examples of how children's books always make me smile. Go on, admit it, you totally at least grinned a little while reading this!

Anyway. this morning I finally mixed it up again, and had oats with banana, crasins, cinnamon, and raspberries. Looking a little something like this:

Lunch was rushed and i didnt get a picture because I had to be at work. I just threw together some veggies with cheeeese, and apple, and some yogurt. Here is a picture I did get of the apple and the yogurt:

Simple, but good! How do you like my new Valentines plates?! haha. I just couldnt resisit. No matter how cheesy it is, Valentines day is one of my favorite holidays! :) I didnt get a picture of dinner either because Mike (BF) called me and I totally got caught up and forgot! Promise ill do better tomorrow!!

Its almost one in the morning!! I have to get up early for a shopping date with mi Madre! Goodnight everyone! :)

Blueberries in Bulk, oh my!

I got the best surprise from my roommate when I opened the refrigerator this morning and found this...

Yay for MASSIVE quantities of blueberries!! My room mate decided to get a membership to Sam's club, so now pretty much everything in the house is in bulk amounts! It looks like we are a family of 10! haha. But, im not complaining, because I will have no trouble taking a few of these off her hands. ;)

So yesterday I decided to try out some yoga videos and OH MY GOODNESS I am soooo sore this morning! The video that I did was a little over an hour and it was supposed to be "strength training" yoga. Well, I believe it because my abs, legs, arms, and almost everything in between were feeling it when I woke up! So, of course I had to do it again this morning! I really recommend the videos on yogatoday there are so many different ones to choose from based on what type of workout you want and what level you are on. Plus the instructor is kinda funny and entertaining.

After I finished breakfast and yoga, I broke out this book that I picked up yesterday:

I loved the first one, and I cant wait to start the second one! I felt realllly stupid though, digging through the children's section of barnes and noble for my book. But oh well, I like what I like! haha. plus I have the excuse of being a teacher if anyone were to get suspicious!

I read up until almost 3! And then I decided to whip me up some lunch. I made a HUGE salad with 1/4 cup of crab meat on top. You cant really tell its in there because I mixed it all up! its just better that way.

Now, Im just gonna relax at home for the rest of the day...because hey?! what else are Sundays for?!

***DINNER UPDATE***

It took me FOREVER to figure out what I was in the mood for tonight! I was really craving something a little sweet, and I wasnt really feeling any kind of meat, but I also had so many veggies at lunch that I wasnt really feeling anything like that either. SOOOO I made up some french toast! I used whole wheat bread, egg whites, and skim milk, for a "healthier version"...I still think it tastes GREAT! Of course I knew that my roommate was going to have SUCH a hard time finishing all those yummy blueberries before they went bad, so I decided to be a stand-up gal and take a few of those off her hands...for her own good, of course ;) I had a glass of milk on the side as well. Just look at that great breakfast for dinner!! haha
